post-holiday figgy pudding

How do you justify eating dessert and still maintain your New Year's resolution in January? Greek yogurt. This pseudo-figgy pudding is actually very nutritious, seasonal, easy and entirely satisfying. Dark chocolate that has more than 70% cocoa content does more good than harm and figs are a winter friendly fruit with tons of natural sweetness. It's also a fairly light dessert and not too reminiscent of the Christmas sugar rush you're finally getting over.

Ingredients:
1 cup plain greek yogurt
1 tsp honey
1/4 tsp vanilla
1 square 70% dark chocolate
2 fresh black figs, chopped.

Place the Greek yogurt in a bowl and add the honey and vanilla. Stir to combine. sprinkle the chocolate around the edges. Place the fig in the center. Enjoy!
